Fillet the fish and cut it into portion-sized pieces. I like to add 1-2 peeled jumbo shrimp as well; feel free to try that too.</p><p fr-original-style="" style="margin-top: 0px; margin-bottom: 1em; box-sizing: border-box;">Place the fish and shrimp into a sealed jar. Add garlic cloves, cherry tomatoes, black olives, and capers. Sprinkle in the fresh thyme, followed by some salt, whole peppercorns, and optional chopped chili pepper. Pour in enough olive oil to cover all the ingredients and seal the jar tightly.</p><p fr-original-style="" style="margin-top: 0px; margin-bottom: 1em; box-sizing: border-box;">Place the jar in a pot filled with water. Heat the water to 60°C (140°F) and cook the jarred ingredients for 45 minutes. You can experiment with different times and temperatures. I've had great results with shorter cooking times at higher temperatures as well.</p><p fr-original-style="" style="margin-top: 0px; margin-bottom: 1em; box-sizing: border-box;">When it’s time to serve, open the jar and transfer the contents to a plate. Don’t waste the aromatic olive oil!
