I thought that the food and beverage world would speed up post-pandemic, but it officially took a huge leap forward let alone speeding up. I'm not just talking about Michelin coming to Istanbul - gastronomy symposiums have increased, chefs' restaurants and culinary variations have multiplied, many local and global products have entered Tukey's market.If you ask me, gastronomy in Turkey reached its peak development speed of the century in the last 3 years. I can say that this has also motivated the sector; in the past, chefs would not come out from their castles, but now they have started to collaborate much more and come together more. In the last few years, I can say that many people working in the food and beverage sector have almost created success out of nothing in such an economy and system.In terms of diversity, we have been catching up with Europe and the USA in recent years. From vegan lahmacun (Turkish pita with minced meat) shops to vegan sections in kebab shops, from restaurants that only work in vegan nutrition to chain restaurants that pay attention to food sensitivity such as vegan-gluten-free-lactose-free, we are experiencing a massive growth in this regard. I can say that since people started to pay attention to both nature and their own holistic nature, plant-based nutrition has entered the arena rapidly. Support your locals:&nbsp;2022 was a fascinating, fast-paced year in terms of food and beverage, and 2023 seems like it is going to be even faster. If you want to be a part of the coming storm, be sure to support local restaurants and producers. Advancing Turkey's gastronomy in local and multi-cultural cuisines is in the hands of the sector, but it also depends on our strong stance and stability - you and me, the consumers. Çağan Tchane Okuyan’la yollarımız dolaylı yoldan kesişiyor. O zamanlar Feed Magazine’in direktörlüğünü yapıyordum ve Kebab Project’le tanıştım. Kebab Project yurtdışındaki döner kültürünü anlatan özellikle grafikleriyle öne çıkan bir sosyolojik araştırma kitabı. Görseller öyle alıcı ki aynı zamanda bir sanat kitabı. Çağan’a o gün değil, bugün ulaşmak kısmet oluyor ve döneri bir de popüler kültür merceğinden konuşuyoruz.Kebab Project fikri nasıl çıktı? Fikri biraz anlatır mısın?KB Project fikri 6-7 yıl öncesinde aklıma düşen bir fikirdi. Döner 1980’lerde Paris’te popüler olmaya başlıyor, Almanya’dan çok daha sonra diyebiliriz. Ben projeyi yapmaya karar verdiğim dönemlerde Paris’teki kebap dükkânları hâlâ 80’li yıllardaki orijinalliğini, duvardaki halısını, Türk bayrağını ve arabeskini yaşıyordu. Yeni gelen jenerasyonun yaptığı ilk iş eskiyi yok etmek oldu. Gittikçe bugüne adapte olmak zorunda kaldılar. Bugünün tabelaları ve isimleri eskisi kadar ruh ve el işçiliği konusunda hassas değil. Araştırmacı yada belgeselci bir gözle baktığım zaman bazı değişimler farkettim ve bu mekânları yenilenmeden önce belgelemek istedim. Bir tür miras projesi de diyebiliriz.Özetlemek gerekirse projemi 3 etaba ayırdım. Mekânları, ustaları ve kebab lover’ları tanımak ve fotoğraflamak istedim. Paris son yıllarda çok göç alıyor ve kebap kültürü önce tacos sonra pizza ve hatta suşiyle bile aynı dükkânlarda görünmeye başlıyor. KEBAB + CHEESE NAAN gibi ürünler ortaya çıkıyor. Geri dönüşler nasıldı?KP 2018 yılında Berlin’de tasarımını bitirdikten hemen sonra İstanbul’da insanların karşısına çıktı. Gerçek boyutta 1x1 olarak betondan bir döner heykeli ve “AYRILIK RÜZGARLARI ÇOK ERKEN ESTİ YAZAN” led neon tabelalar altında sergilendi. Daha sonra 2. evi olan Berlin’de havasını attı ve Paris’e, yuvasına geri döndü.Bundan önce dönerle aran nasıldı? Nereleri seversin?Ben ıslama köfteciydim, bizim dedemiz Gürcü göçmeni. Kardeşimle birlikte onun restoranlarında öğrendik Fanta’yı, köfteyi ve döneri. Kitapta zaten 2010’da çekilmiş kocaman bir fotoğrafı var, hemen altında da 1970’lerdeki Adapazarı Kömürcüler Pazarı dönercisinde çekilmiş bir fotoğrafı. Sokak yemekleriyle aram her zaman iyiydi yalnızca Paris’e göçten sonra kafamız karıştı.Türkiye’deki dönerciler ve yurtdışındaki dönercilerin senin gözlemlediğin farklılıkları neler? Bu duygusal da olabilir, görsel de olabilir, tatsal da…Kimse ben dönerci olurum diye başlamamış bu işe gurbette. Yani düşünsene geldin Avrupa’ya ve bir kelime dil öğrenemedin. Zaman akıyor para kazanıp eve yollaman lazım. Ne yapacaksın? Bence Alman dönerinin tek artısı muhteşem somun ekmeğinin içindeki taze salatası ve son dokunuş olan limon suyu.Fransa’da işler farklı. Gastronominin babası Fransa sana her türlü özgürlüğü veriyor, istersen geceden marine et etini sabahtan tak istersen git donmuş al pişir. Fransa’da döner Belçika’dan arakladığı nefis patates kızartmaları ve 2000’lerin başında arz/talep sayesinde doğan sos saçmalığıyla sunuluyor. Samurai sosu; Cezayir sosu, Amerikan sosu, sos da sos… Benim için değişmeyen tek tarif fırında yapılmış (sanayileşmemiş) lavaşa sarılmış, karışık salatalı sauce blance’la (beyaz sos, cacıktan hâllice otlu yoğurt sosu) servis edilen dürüm dönerdir. Dördüncü jenerasyon işleri ele almış ve kimsenin de umurunda değil. Artık duvara asılan bir saz ya da güllerden yapılmış freskler yok, orijinal kalan 3-4 tane dükkân da zaten kitabımda var.Bir röportajında döner projesinin büyüklüğünü gördükten sonra projeyi sonlandırdığını okumuştum, “too much döner is overwhelming” diyebilir miyiz? :)“Too much döner is never enough” da diyebiliriz :). Bana yeterli gelen dönerin hikâyesi oldu. Ben projeye başladığımda biraz da nereden geliyor bu döner sorularını çok duyduğum için yola çıkmıştım ve aniden kendimi 2017 Ağustos’unda Mezopotamya’da buldum. Yemekler insanlar ve kültürler arasında bir köprü kurmak istedim. Mesela şu an senin sorularını cevaplarken Brüksel’de Sudan lokantasında fıstık ezmeli bir şeyler yiyorum ve yine merak ediyorum. Dahasını öğrenmek istiyorum. Ben bir noktada, “tamam” demeliydim çünkü şu aralar kolektif bilincin hafızası da çok kısa geliyor. Seni hemen bir şey olarak görmek ve etiketlemek istiyorlar. O dönem bir anda “Kebab Boy” oluverdim ve istediklerimi yerine getirdim. Kitabımda dedeme selam verdim ve bu konuda yazılmış/fotoğraflanmış dünyadaki ilk kitabı yapmış oldum.Şimdilerde KB Project kitabı ABD’de bazı üniversitelerin kütüphanesi dâhil olmak üzere Avrupa’da birçok insanın özel koleksiyonunda bulunuyor.Senin bir dönercin olsa içinde neler olurdu?Zaman makinası gibi bir yer düşünüyorum, zamanın farklı aktığı, eskinin inceliği ve kırılganlığı var. Eski bir Türk filmi ya da Bodrum’da bir sokak, 1960’ların sonu 1970’lerin ortası gibi diyebilirim. Kent kahvesi havasında. How should it be cooked? Are there any requirements? "&nbsp;I want to ask the expert “Of course, this is a basic rule for any given meal: Good food requires good and fresh ingredients. Choosing the best meat is the ultimate trick when it comes to döner kebab. Although it isn't preferred in Istanbul due to its cost, the best döner kebab is made from lamb. If good ingredients are not compromised, delicious döner kebabs can be made from the formula "75% beef thigh, 20% lamb, 5% tail fat".
